tuscan chicken & shrimp

My Tuscan chicken and shrimp recipe creates a hearty dish that combines the richness of creamy sauce with the freshness of tomatoes, spinach, and herbs. Tender chicken thighs and succulent shrimp are seasoned with Italian herbs and cooked to perfection. Add a rich and creamy sauce made from heavy cream, cheese, and garlic, which is infused with the tanginess of tomatoes and you're good to go. This recipe creates a wonderful blend of flavors that will transport you to the sunny hills of Tuscany with every bite! I have fallen in love with how good and easy it is to make!

INSTRUCTIONS
INGREDIENTS


• 4 boneless, skinless chicken thighs
• 1 pound of shrimp, peeled and deveined
• 2 tablespoons chopped fresh parsley
• 2 cloves garlic, minced
• 1/2 chopped spinach
• Seasonings of your choice, Italian herbs (basil, oregano, thyme, etc) should be included
• Pasta of your choice, Mafaldine was used for this recipe
• One can of diced tomatoes 
• 1 tbsp of butter
• 1 chopped shallot
• 1 can of tomato paste
• 1/2 cup heavy cream
• 1/4 cup grated Parmesan cheese
• Olive Oil

PREPARATION AND COOKING
Total Time: 40 Mins 
➊ Season the chicken thighs and shrimp with Italian seasonings.
➋ In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
➌ In the same skillet, melt the butter over medium heat. Add the minced garlic, shallots, spinach and sauté for about 1 minute until fragrant.
 Add the diced tomatoes and to the skillet. Cook for 3-4 minutes until the tomatoes soften. Place your pasta to boil at this step. 
➎ Stir in the heavy cream and grated Parmesan cheese. Allow the sauce to simmer for a few minutes until it thickens slightly.
➏ Return the chicken thighs to the skillet and add the shrimp. Cook for an additional 2-3 minutes until the shrimp turns pink and is cooked through.
➐ Serve the Tuscan chicken and shrimp hot with your pasta.
