The small game bird is seasoned with my favorite blend of herbs and spices, including paprika, salt, garlic, and onion powders...baked and then seared to a golden brown, locking in its natural juices. The hen is then smothered in a rich and savory sauce, made from baking juices! This hen was baked with a combination of onions, garlic, celery, potatoes, squash, and chicken broth. This dish is perfect for a special occasion or a cozy family dinner, all year round!

INSTRUCTIONS
INGREDIENTS
• 1-2 Cornish hens
• 2 celery stalks, chopped
• 4 small potatoes, quartered
• 4 carrots, peeled and cut into chunks
• 1 onion, sliced
• 1 small squash, sliced
• 4 cloves of garlic, minced
• 2 tablespoons olive oil
• 1 cup chicken broth
• 1 tablespoon dried thyme
• Seasonings of your choice

PREPARATION AND COOKING
Total Time: 55 Mins
➊ Preheat your oven to 400°F (200°C).
➋ Season the Cornish hens with your choice of seasonings. Place them to the side.
➌ In a separate bowl, toss the chopped celery, potatoes, carrots, onion slices, squash, and minced garlic with olive oil. Season to taste.
➍ In a baking dish, arrange the chopped vegetables around the Cornish hens and add chicken broth.
➎ Cover the baking dish with foil and place it in the preheated oven. Bake for about 30-35 minutes.
➏ In a skillet, take some of the juices from the baking dish and add some butter and a teaspoon of flour till the juices thicken slightly. If you add too much flour, just add more pan juices till the gravy becomes loose again.
➐ Serve the baked Cornish hen with the roasted vegetables, and smother it with some of the pan juice gravy over the top for added flavor!
