Stuffed Scallops

The perfect mix between sweet and savory, these flavorful scallops sit nestled in al dente tagliatelle, on top a bed of sweet carrot and pepper puree. A simple recipe where all you'll need to do is Spice, Sautee, and Serve.

INSTRUCTIONS
INGREDIENTS


• 1/4 cup grated Parmesan and mozzarella cheese
• 12 large scallops, cleaned and shells removed
• 2 tablespoons chopped fresh parsley
• 2 cloves garlic, minced
• 1/2 chopped spinach
• Seasonings of your choice
• Olive Oil 
• 8 ounces tagliatelle pasta

• 2 tablespoons olive oil
• 1/4 cup of vegetable broth
• 1/4 cup heavy cream
• Seasonings of your choice
• 1 tomato and 1 red pepper

PREPARATION AND COOKING
Total Time: 35 Mins 
➊ Preheat your oven to 400°F (200°C).
➋ In a bowl, combine the cheese, spinach, parsley, garlic, olive oil, and seasonings. Mix well until the ingredients are evenly combined.
➌ Pat the scallops dry with a paper towel. Take each scallop and stuff it with the cheese mixture, pressing gently to ensure it sticks to the scallop. Place the stuffed scallops on a baking sheet.
 Bake the stuffed scallops in the preheated oven for about 12-15 minutes or until they are cooked through and the breadcrumbs are golden brown.
➎ While the scallops are baking, cook the tagliatelle pasta according to the package instructions until al dente. Drain the pasta and set aside.
➏ In a blender, add the tomato, garlic, and puree until even.
➐ In a skillet, heat the olive oil over medium heat. Add the puree and sauté for about 3-5 minutes until fragrant..
➑ Reduce the heat to low and add the heavy cream to the skillet. Stir well to combine and let it simmer gently for 2-3 minutes until the sauce thickens slightly. Season to taste. Add the cooked tagliatelle pasta to the skillet with the sauce. Toss the pasta in the sauce until it is evenly coated.
➒ Take the baked scallops and place on top of the pasta. Serve with leaves as garnish if desired.
