INGREDIENTS


• 4 boneless, skinless chicken thighs or breasts
• 2 tablespoons olive oil
• 2 tablespoons chopped fresh parsley, spring onion, and cilantro
• 2 cloves garlic, minced
• 1/2 chopped spinach
• Seasonings of your choice
• Chopped bacon
• 1 cup sun-dried tomatoes
• Lemon Juice
• 8 ounces of Toscani pasta

• Fresh basil leaves, chopped (for garnish)
• 1 cup shredded gouda, white cheddar and mozzarella cheese
• 1 cup of heavy cream
• Seasonings of your choice

PREPARATION AND COOKING
Total Time: 35 Mins 
➊ Season the chicken with seasonings of your choice - we used seasoned salt, Italian blend, paprika, and jerk/cilantro pastes for this recipe. 
➋ In a large skillet or pan, heat the olive oil over medium-high heat. Add the chicken breasts and cook until browned and cooked through, about 6-8 minutes per side. Remove the chicken from the pan and set aside.
➌ In the same pan, add the minced veggies and garlic and sauté for about 1 minute until fragrant. Add the sun-dried tomatoes and cook for an additional minute.
 Pour in the lemon juice, chicken broth and heavy cream, and bring the mixture to a simmer. Stir in the cheeses till the mixture thickens.
➎ Add the pasta to a pot and cook for about 10-12 minutes, or until the pasta is cooked al dente, stirring occasionally.
➏ Add the chicken back to the pan with the sauce and cook for an additional 3-5 minutes. 
➐ Once the pasta is done cooking, place in a bowl and top with the chicken and sauce!
