• 1/4 cup grated Parmesan and mozzarella cheese
• 1 pound skirt steak
• 1 pound large shrimp, peeled and deveined
• 4 medium-sized potatoes, peeled and cut in four
• 2 tablespoons avocado oil
• 1 tablespoon butter
• 1 shallot or onion, finely chopped
• 1 clove of garlic, minced
• 2-3 cups fresh spinach
• 1 cup heavy cream
• 1 tablespoon of flour
• 1/4 cup grated Parmesan cheese
• Fresh parsley, chopped (for garnish)
• Seasonings of your choice

PREPARATION AND COOKING
Total Time: 40 Mins
➊ Preheat your grill or grill pan to high heat.
➋ Season the skirt steak and shrimp with seasonings of your choice. Peel potatoes and boil in water, with salt and a tablespoon of oil for no more than 12 minutes.
➌ In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the potatoes and cook until golden brown and crispy. Set aside and keep warm.
➍ In the same skillet, melt the butter over medium heat. Add the onion and garlic and sauté until softened and fragrant.
➎ Add the spinach to the skillet and cook until wilted. Pour in the heavy cream and simmer for a few minutes until the sauce thickens. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
➏ Grill the skirt steak for about 4-5 minutes per side, or until desired doneness. Let it rest for a few minutes before slicing.
➐ While the steak is resting, grill the shrimp for about 2-3 minutes per side until they turn pink and opaque.
➑ Arrange the sliced skirt steak, grilled shrimp, fried potatoes, and creamed spinach on a platter.
