INGREDIENTS
• 1 bunch broccolini, trimmed
• 4 flounder fillets
• Seasonings of your choice
• 2 tablespoons olive oil
• 1 tablespoon fresh lemon juice
• 2 baby bok choy, chopped
• 2 tablespoons butter
• 1/2 cup of heavy cream
• 2 cloves garlic, minced
• 1/2 cup dry white wine
• 1 cup vegetable or fish broth
• Cream of chicken, 1 can
• 1 cup of Mediterranean couscous
• 1 bag of mixed vegetables

PREPARATION AND COOKING

➊ Season the flounder fillets with seasonings of your choice on both sides.
➋ Prepare the couscous according to package instructions. Season as desired.
➌ Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the flounder fillets for about 2-3 minutes on each side until lightly browned.
➍ While the flounder is baking, prepare the vegetables. Cook the broccolini with seasonings of your choice and a splash of vegetable stock. Chop the bok choy and set aside.
➎ Set the flounder aside. In the same skillet used to sear the flounder, melt the butter over medium heat. Add the minced garlic, shallots and chopped boy choy and sauté for a few minutes, until fragrant.
➏ Pour in the white wine and cook for a couple of minutes until slightly reduced. Add the vegetable or fish broth and simmer for another 3-4 minutes. Add in heavy cream. Season with salt and pepper to taste.
➐ In a skillet, heat butter over medium heat. Add mixed vegetables and the cream of chicken - half of the can should be sufficient for 1 cup of cooked couscous. Fold couscous into the sauce until well combined.
➑ Arrange the cooked broccolini and couscous on a serving platter. Place the herbed flounder fillets on top and drizzle the bok choy white wine sauce over the flounder.
